I cannot be the only one looking for easy, yummy weeknight meals, right? If it involves chicken, cumin and the slow cooker, I am almost always willing to give it a try! We have a delicious enchilada recipe that we've been cooking since early in our marriage, but it's time consuming and it smells too good to wait the hour that it takes to pop it in the oven -- especially when the kids are involved. I had seen a few similar slow cooker versions over the summer, but none of them quite lived up to our favorite recipe. I decided to try my hand at modifying it myself and all I can say is, you're welcome! Our Favorite Chicken Salad
I know I promised this recipe yesterday, but Wednesday kind of kicked me in the rump. Work was insane, I didn't get much of a lunch break, I had to pick up E from dance for Josh, missed Bible Study and never sat down until I fell into bed at 10 o'clock last night. I had planned to be so productive yesterday, but everything I touched turned to mush. If you'll remember, last week Josh said I made the best chicken "known to man". It's an adaptation of a recipe given to me by a friend, but we've been tweaking it for some time and finally have a go-to formula. I think I even blogged about it in the past, but it wasn't as good them as it is now. First up, dry ingredients. I cook four large boneless, skinless chicken breasts in the crockpot overnight or while I'm at work. They will be tender ...
Loaded Potato Soup
On Saturday afternoon, I made the best loaded potato soup ever. And then I'm pretty sure that I threw the recipe away by mistake! There is a lunch restaurant near my office who serves potato soup in the winter and it sells out almost every day. If you want it, you have to eat lunch at 11 o'clock or you're out of luck. After seeing a yummy recipe on Facebook last week, I decided to try my hand at it. And considering that the scrap of paper where I wrote the directions is probably somewhere beneath the remnants of Easter candy in our trashcan, I'm going to do my best to tell you how to make it from memory. INGREDIENTS: 4 large baking potatoes 3 cups chicken stock 1 lb bacon, cooked and chopped into small pieces 1/3 white onion, chopped 3 green onions, finely diced 3 T butter 3 T ...
Grocery List
Who says the weekly list can't be a grocery list? Here's what you need: 4 boneless, skinless chicken breasts 6 low carb, whole wheat, 6 inch tortillas 8 ounces fat free cream cheese, at room temperature 8 ounces Weight Watchers Reduced Fat Mexican Style Shredded Cheese 4 ounce can of green chiles 1/3 red onion, finely diced olive oil cooking spray Now I can see how right off hand this list wouldn't sound very appetizing, but trust me. Josh and I love chicken enchiladas and we have a go-to recipe that is heavy on our dinner rotation. It doesn't have traditional enchilada sauce and the ingredients are a bit unconventional, but it is YUMMY. I decided on a whim today to try and modify the recipe for Weight Watchers and we did pretty good coming in at around 11 points per serving ...
Scrum "Dill"y Chicken Salad
Do you love chicken salad as much as I do? I could seriously eat it for lunch every. single. day. If you are from the Birmingham area, you know there is a spectacular local restaurant that is known for it's chicken salad. There are hardly any seats in the restaurant as it is, so if you want to eat there for lunch you better call it in or get there super early. Even if you get there early, you might have to split a table with complete strangers. Trust me, it's worth it. I might not have gotten the top-secret recipe just right, but after reading tons of options on countless cooking sites over the last few weeks, I decided to give it a shot and see how close I could get. I know this isn't a food blog and I'm clearly not an excellent photographer, but we scarfed this stuff down so quickly ...
