Guys, I’m struggling. I’m struggling to make it through the grocery store without wanted to collapse. I’m struggling with getting my kids to eat any vegetables at all. I’m struggling with what to eat during these first trimester days and how to stand the terrible smell of food cooking, while I’m at it! During my first two pregnancies, I either had no children or one toddler, who was very easy to please. With older girls and a much busier schedule, I’m feeling the demand to be better at this pregnant parenting thing. Enter Shipt’s delivery services… again.
Even though we live just outside of the delivery area, we’ve been using Shipt to deliver groceries and household items to my office, for almost a year. I can’t exactly use it for my big grocery shopping trips — can you imagine me trying to haul those up and down the elevator myself?! — but it has been such a lifesaver for forgotten and specialty items. Since finding out we were expecting last month, it’s been super hard to meal plan, since I never know what will sound good to me on any given day. But with Shipt, I can order one meal’s worth of groceries when I decide something sounds good, and I don’t have to stress about adding another stop to my already exhausting commute. That is exactly what happened yesterday!
I’ve been craving warm comfort foods and chicken pot pie sounded so good, but there were a few problems with our regular recipe. One, it isn’t gluten-free, so Sophie can’t have very much of it. Two, it calls for veggies that aren’t at the top of the girls’ list — neither of them like beans, peas or corn! I promised them both that I would come up with a recipe that worked for everyone in our family and we would have warm, bubbly chicken pot pie this week.
Ingredients
For the crust:
3 cups King Arthur Gluten Free Baking Mix
2 sticks of salted butter, cold
1/2 tsp salt
8-10 TB of milk, cold
For the filling:
2 boneless, skinless chicken breasts, cubed
1 2/3 chicken broth
1/3 cup of butter, plus 2 TB
shredded carrots (about half a bag)
broccoli florets (about half a bag)
shredded potatoes (about half a bag)
small white onion, chopped
1/3 gluten free baking mix
2/3 cup of milk
salt & pepper to taste
Instructions:
Preheat oven to 425*
Place 3 cups of baking mix, salt and butter (cut into small pieces) in a large mixing bowl.
Combine baking mix and butter with a fork until well incorporated.
Add milk and mix until a soft dough forms.
Roll out dough onto floured surface until 1/4″ thick.
In a large saucepan, combine chicken, carrots and potatoes, cover with water and boil until cooked. Drain and set aside.
In same saucepan, cook chopped onion in 2 TB of butter and cook until transparent.
Add remaining baking mix, salt and pepper to onions and stir until incorporated.
Add milk and chicken broth slowly, whisking until combined. Cook over medium heat until thick.
Add chicken and vegetables to the gravy mixture* and stir until combined.
Pour filling into large casserole dish and cover with crust.
Cut slits in crust to allow steam to escape. Cook on 425* until crust is brown and filling is bubbly.
*Double gravy mixture for soupier consistency.

This recipe was such a crowd pleaser and our house smelled so good! I’ll probably try doubling the gravy portion of this recipe the next time around, because it would be even better if it were extra creamy. Sophie was a little hesitant about the carrots, but Ella loved every bite. This would be so easy to modify for your own family, incorporating what vegetables your little ones will eat. It also makes such a huge portion, that if you use smaller baking dishes, there would be enough to bake one and freeze the other one for later.
Basically, Shipt + Target is a match made in heaven, especially for those of us who are barely holding it together. What is better than having all of our favorite Target items delivered to the door and having a delicious dinner on the table that everyone will eat?! Absolutely nothing.
