I’m not trying to rush June away already, but this weekend was so sweet and I can’t wait for work to settle down a bit so that I can enjoy my people a little more thoroughly and a little more often! We didn’t do anything significant this weekend, but I spent long uninterrupted days with Josh and the girls, drank many pots of coffee, watched movies, slept late, got a pedicure and logged a few hours in the sun.
After a long day at the pool, these three girls decided that they wanted to see Maleficent and since Josh was glued to college baseball, it worked out well! The big girls wanted Zaxby’s for dinner, but Sophie requested “Marinara Bread” (Panera Bread) so we had to make two stops before the movie started. We had just settled in with our popcorn when the previews started and Sophie fell promptly asleep. She has chastised me several times since then, but when I tried waking her up for the movie, she was NOT having it.
If you haven’t already seen the movie, I highly recommend it. I would definitely see it again at the theater. Although the trailers look very dark, that only accounts for about a third of the movie. It tells the tale of Sleeping Beauty from Maleficent’s point of view and fills in lots of dirty details. I loved the movie (and so did the big girls) and Angelina Jolie is stunning!
Sunday night for dinner, Josh grilled burgers and made his mom’s fried potatoes. After having the most delicious bacon relish at a local restaurant a few weeks ago, I decided that ALL burgers need this forever and ever amen. I made it for Memorial Day and we can’t stop talking about it!

- 1 pound of compliant bacon, cooked and chopped into small pieces
- ½ small red onion, finely diced
- 1 small tomato, seeded and finely diced
- 2 TB sweet pickle relish (no sugar added!)
- Compliant mayo to taste
- Toss all ingredients together in a bowl and refrigerate until chilled!
