It’s been several weeks since I told you we were working to clean up our diet and I subsequently mentioned we were thinking about giving eMeals a try. I’m so proud of the changes we’ve been making in our diet so far {especially Josh!!} and the clean eating plan from eMeals is just the thing to keep us on track. Today’s meal post is a little different than the last few weeks, but I hope you find this information some of the most beneficial I’ve shared to date.
I’m not the most organized person in the world, thanks to two crazy children, a stressful job and a two-hour daily commute. I’m doing the best I can to meal plan and get all of our grocery shopping done on the weekends, but I need all the help I can get. Enter eMeals. Our first meal to try was Parmesan Chicken with Lemon-Caper Sauce & Spicy Sauteed Broccoli. It was so good and we had tons of leftovers! We chose a family meal plan, so there is always plenty for the four of us to eat for dinner and if the girls happen to have something different, then Josh and I have enough left over to share for lunch the next day. This meal was no exception.I’m sure you are more than capable of following a recipe without my help, but what’s a “Monday’s Meals” post without lots of pictures!? The recipe called for 3 boneless, skinless chicken breasts cut down the center. Since we were using our yummy Zaycon chicken, we only needed two breasts for this recipe. They are almost 1 pound each! I coated them in salt, pepper and fresh Parmesan and added them to our giant electric skillet.
While the chicken was cooking, I started sauteing our garlic & crushed red pepper in oil. My kitchen was starting to smell so good.
Once the garlic is tender, add your broccoli florets and chicken broth, allowing your broccoli to steam until tender.
Once the chicken was cooked throughout, I removed it from the skillet and added lemon juice, chicken broth and grass-fed butter. If you’re a fan of capers, here is where you’ll add them, but I decided to leave them out. Continue stirring your sauce {make sure to scrape the pan for all of that yummy goodness left from cooking your chicken} and cook until reduced by half and slightly thickened.
Serve the lemon-caper sauce over your chicken and ENJOY.
Let me just go ahead and say that prior to 2014, I was not a huge fan of broccoli. I loved it raw, but I could not get on the roasted veggie bandwagon. Well, today I am singing a different tune. I read somewhere recently that it can take up to ten times of trying a new food to develop a taste for it?! I’ve been eating some form of broccoli every week for the last month and I am definitely a convert, but this spicy broccoli is hands-down my favorite so far!
